Nidia Ramírez Correcha is a prominent figure in the Ortega region and president of the Amucaflome association . Together with her husband William Lozano, they have been managing the Los Laureles – La Arabia farm at an altitude of around 1,800 meters above sea level for more than two decades, which William inherited from his mother Farina Inés Quintero. It was her determination to keep the farm going in difficult times that became a family legacy, which Nidia continues today – caring for the land, the community, and the people around her. In addition to other cultivars , the farm mainly grows Geisha, which is at the heart of their work: selective harvesting, attention to detail, and motivating pickers with bonuses for precision guarantee raw materials of the highest quality. The microclimate of the Andean slopes, with sunny days and cooler nights, slows down the ripening of the cherries, deepens their sweetness, and allows the floral aromas for which the best Tolima lots are so sought after to come through. Nidia is not just a producer—she is a leader who inspires other women to enter the world of coffee with her approach.

Process:

The processing is done using the washed method and is carried out with great attention to detail to preserve the purity and delicate floral notes. Hand-picked, fully ripe cherries are first left to rest for about 12 hours, then peeled, followed by controlled fermentation for approximately 22 hours, during which the pulp residues are broken down. This is followed by washing and double rinsing with clean mountain water, which stabilizes the flavor and enhances the sparkling, smooth sweetness in the cup. Drying takes place in parabolic solar dryers: first gentle pre-drying, then slow drying to optimal moisture content to "lock in" the profile and keep it consistent across preparations. The result is a coffee with precise purity, delicate and intricate in the cup.
